1. Who we are
Pasta Bar Santorini operates a fast-casual pasta bar at Oia Central Square, Santorini, Greece. For any privacy-related enquiry you can reach us by phone at 2286 072155 or in person at the venue. This policy explains what data we collect, why, how we use it, and the choices available to you.
2. What data we collect
We collect the minimum data needed to operate the website and understand how it is used. Specifically:
- Analytics: anonymised, aggregated traffic data via Google Analytics 4, deployed through Google Tag Manager. This records page views, country, device class, and approximate navigation. We do not collect names, emails, phone numbers or any other identifiers through analytics.
- Cookies: a single first-party cookie called
pb_consentthat records whether you accepted or rejected non-essential cookies. It persists for 90 days and stores one of two values:acceptorreject. - Embedded maps: the Google Maps iframe on the contact page and on our home page can set Google's own cookies (NID, CONSENT) when loaded.
3. Cookies in detail
You can change your choice at any time by clicking "Cookie preferences" in the footer. The current categories covered by the banner are:
- Strictly necessary — always on. Stores your consent decision.
- Analytics — Google Tag Manager + Google Analytics 4. Off until you accept.
We do not use advertising or remarketing cookies, and we do not share any data with third parties for advertising.

Google may transfer data outside the European Economic Area. Where it does, Google relies on Standard Contractual Clauses and equivalent safeguards.

- Request deletion of your data.
- Restrict or object to processing.
- Request data portability.

6. How long we keep data
The pb_consent cookie is kept for 90 days and refreshed on each new choice. Google Analytics 4 data is retained according to Google's defaults (14 months by default for new properties). We do not maintain any user-facing database of personal data.
7. Changes to this policy
If we make material changes we will update the "Last updated" date above and surface a notice on the site. Continuing to use the site after a change means you accept the updated policy.
